• 1/4 cup of quinoa
  • 1/2 cup water or chicken stock
  • 1 cup of spinach
  • handful of walnuts

Add water or chicken stock and quinoa to pot and boil on medium until all the water disappears and the quinoa gets those little tail thingies. Stir in spinach, and leave covered. Heat a dry pan to medium, add in the walnuts, toast slightly (and watch them shaking the pan a lot, they burn really easily). Add the walnuts into the quinoa/spinach mixture and serve (for an extra treat, add some goat cheese to the top).
