• 1 piece of chicken (works well with any type, but something with skin will add crispiness)
  • 1 clove of garlic
  • 1 big spoonful of plain yogurt
  • 1/4 tsp cayenne
  • 1/4 tsp ginger (fresh works best, but powder is ok)
  • 1/2 tsp curry powder
  • 1/4 turmeric
  • big spoonful of tahini
  • dash of cardamom (if you have it, not the end of the world if you don’t)

    Mix the yogurt, garlic, tahini and all the spices into a bowl that will be large enough to hold your chicken. Add in the chicken and stick it into the fridge (covered) for at least an hour (best if you do this in the morning before you leave for work). Preheat the oven to 425F, and bake for about 20-25 minutes. Serve with rice, lentils or my chickpea salad.
