One of my all time Favourite dishes to make - easily doubled, tripled, or quadrupled if you have company

  • 1 Chicken Breast (bone in works best)
  • 1 medium potato, or three small cut in pieces
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 2 tsp herbs de provence 
  • 2-3 cloves of garlic, smashed and lightly chopped
  • half a small onion
  • salt and pepper to taste

    Place the potatoes, garlic, onion, 1 tsp of the herbs, and the oil olive in the bottom of a casserole dish. Mix together until everything is evenly coated. Place the chicken on top of the potato mixture, and pour the soy sauce and other tsp of the herbs on top. Place in a 425 degree oven for about half an hour. (chicken should be brown and the potatoes fork tender)
