- 1 boneless chicken breast
- 1/2-3/4 cup of broccoli
- 3-5 crimini mushrooms
- 1 clove of garlic
- 1/4 cup diced red onion
- 1inch of ginger sliced then chopped
- sriracha to taste
- 2tbsp soy sauce
- big spoonful cashew butter (or other nut butter of your choice)
- 1/2 cup brown rice
When i made this, i used brown rice that i had cooked up the day before (always easier to make 2 cups of rice and just use as needed than try to make a single serving each time) but if you are making the rice as a single serving, use 1/4 brown rice, and 2/3 cup water. Do this before you start anything else, because it takes a while (like half an hour). If you have left over rice, add a couple tbsp of water the rice and heat on medium in a covered pot a couple minutes to reheat it.
Chop up the broccoli, mushrooms, red onion, garlic, and ginger and place it in a bowl off to do the side. Cut up the chicken in bite sized pieces. Heat a little bit of olive oil in a pan, add the chicken. While the chicken is browning, mix together soy sauce, cashew butter, sriracha, and a little bit of water (you want about 1/4 cup total of liquid). Once the chicken is cooked through (break a piece with a wooden spoon to check) add in the vegetables and stir for about a minute. Add in the sauce, stir and toss about another minute. Pour over the rice, and enjoy.
