Simple enough and great either hot or cold (Hint, make two and pack one for lunch the next day)
- 1 boneless chicken breast
- 1/2 tsp garlic powder
- 1/2 tsp chilli powder (try different chillies for different twists - current favourite of mine is chipotle)
- 1 tbsp olive oil
- zest and juice of half a lime (use the other half in a glass of water)
- spoonful of goat cheese (really this depends on your taste)
- spinach leaves (5-6 of the baby ones work)
- some sort of bread (crusty buns are my favourite)
Place the chicken in a zipper bag and add the garlic, chilli powder, olive oil and lime. After closing and getting all the air out of the bag (a very very important step) smush the chicken breast with your hand to make it flat. Heat a pan to medium heat (grill pans are best if you have it) and place chicken in. It will take about 5-7 minutes per side depending on how thick the chicken is. While it is cooking place the goat cheese on one half of the bread, and the spinach leaves on the other half. Once the chicken is done, place on the bread, goat cheese should get slightly melty.
