This is one of those dishes that i love for it’s simplicity and how easy it is to use it as a meal, as a side dish, or as a base for adding things to (pork tenderloin, chicken, and tuna work great).
- one can of chickpeas
- 4 inches of cucumber diced up
- 1/4 cup of red onion
- one clove of garlic grated on the small side of a cheese grater
- 1/4 cup of feta crumbled
- 2-3 tbsp of yogurt
- 1/2 tbsp of olive oil
- squeeze of lemon juice (i used a wedge that i then threw into a glass of water)
Drain and rinse the chickpeas. Add chickpeas and everything else into a bowl, mix well, eat (seriously that easy)
