Spring Vegetables with Asian Noodles

    This is a very simple, quick, and healthy last minute meal. Don’t feel like you have to use what is listed below. Any vegetable combination really will work.

  • 3-4 asparagus stems
  • 2-3 carrots
  • 1/2 cup of broccoli
  • 1 cup chard or kale
  • 1/2 onion
  • 1-2 cloves of garlic
  • slice of ginger root
  • half a package of fresh asian noodles (or use the noodles that come in instant asian soup packages)
  • soy sauce
  • chilli flakes
  • olive oil

    Prepare the noodles as per the instructions and set aside. Chop all vegetables into bite size pieces and then add all the vegetables (but not the garlic or ginger) to a pre-heated pan. Once they have begun to soften, add the garlic and ginger root (both sliced) to the pan and stir for about a minute. Add in soy sauce and chilli flakes to taste, then toss in the noodles. Once everything is heated through, serve and enjoy.
