- 1 boneless chicken breast
- 1 clove of garlic
- 1/2 cup mixed olives (if you get them from the salad/olive bar make sure you get a little of the olive oil)
- 1/2 an onion
Flatten the chicken breast and brown on both sides (using the olive oil from the olives if possible). Once browned, remove from pan and add in the onion and garlic – allow to soften stirring to avoid burning. Add in the Olives and stir for about a minute. Add back in the chicken and cover for 5-10 minutes (depending on how thick the chicken is). If there is not a lot of liquid in the pan, add a little water or chicken stock to prevent burning.
