- 1 can of lentils
- 1-2 carrots
- 1/2 an onion
- favourite curry powder or paste
- chicken or vegetable stock
Slice up the onion and add to a hot pan with a little olive oil. Add in cut up carrot and cook until it begins to soften. Add 1/2 Tbsp – 1 Tbsp of curry powder or paste and stir until the onions are coated. Add in the lentils, and enough stock to just cover. Simmer on medium for about 15 minutes. Serve either as is, or blend for a creamy texture.
