Black Bean – Corn – Chicken – Tex-Mex like Dish

ok, so i don’t have a name for this dish, but it is honestly worth trying

1 boneless chicken breast (or left over cooked chicken)

1 can of black beans, rinsed and drained

1/2 a cup of frozen or fresh corn

1/2 tbsp of olive oil

hot sauce to taste (sometimes i use chipotle chilli powder instead, play around)

    Heat a pan to medium high. Add oil, then chicken and brown. If the corn is frozen, add it first and wait for it to be mostly heated through (about 3-4 minutes) then add the beans, if it is fresh, add it and the beans together. Cook another 5 minutes and add hot sauce – stir another 1-2 minutes and serve. (Hint on this one – left overs can be made into a wrap, or put onto nachos, or used to top a salad)
